The Wilder Institute/Calgary Zoo is seeking a permanent part-time Concessions Chef de Partie to execute all day-to-day operations for food service at the concession's outlets across the grounds.

The Concessions Chef de Parties will create memorable experiences through high-quality food and superior customer service. This role involves leading and training staff, developing and standardizing recipes, and supporting the management team. The Concessions Chef De Partie will also be responsible for menu planning and research and development for all concession outlets, ensuring quality control and fostering strong relationships with the main kitchen production team.

What you will do:

  • Create exceptional experiences through high-quality food and superior customer service.
  • Ensure all food handling and sanitation procedures are strictly followed.
  • Lead and train staff, develop recipes, and support the management team.
  • Standardize recipes for all food items and train line staff accordingly.
  • Plan menus and conduct research and development for all concession outlets.
  • Create daily specials and innovate new menu items.
  • Oversee quality control for products delivered from the main kitchen.
  • Foster strong relationships with the main kitchen production team.
  • Maintain cleanliness and organization of all work areas and storage areas, including countertops, utensils, equipment, and refrigeration.
  • Ensure compliance with health and safety regulations, including the zoo's health and safety program.
  • Place work orders as necessary to maintain kitchen operations.
  • Support other kitchen positions in need of assistance.

What you will bring:

  • 3 or more years of experience in a culinary environment is required
  • Valid Driver's License is required
  • Food Safety Training Certificate is required
  • Red Seal Certification is preferred
  • Supervisory experience an asset. Strong preference given to those with experience in mid to large sized operations
  • Previous experience with menu engineering and food cost controlling methods
  • Strong leadership and customer service skills
  • Ability to work with little supervision
  • Ability to operate golf carts and 1-tonne panel trucks
  • Previous experience requisitioning and ordering inventory

Working Conditions:

  • Able to work in fast pace environment
  • Exposure to hot & cold elements
  • Periodical exposure outside the kitchen on zoo grounds
  • Consistent exposure to flora and fauna on zoo grounds
  • Flexible work schedule including early mornings, evenings, weekends and holidays
  • Heavy lifting (up to 50 lbs), walking and standing for long periods of time required

The Wilder Institute/Calgary Zoo is an outdoor facility and all staff working at the zoo must be comfortable working in a large variety of outdoor conditions. The Wilder Institute/Calgary Zoo follows the advice of Environment Canada when responding to temperature and air quality issues.
