THE POSITION

The Junior Sous Chef supports the Banquet Chef or Sous Chef in managing and directing all aspects of kitchen operations. The Junior Sous Chef is also responsible for food preparation in the Main Kitchen, which includes hot and cold stations, Pastry, Suites, and the staff cafeteria. This role involves providing functional assistance and coordinating events with other managers in the F&B department, particularly in the absence of the Chef. The goal is to ensure a high food quality for guests attending events at the Saddledome and McMahon Stadium.

KEY ACCOUNTABILITIES

  • Demonstrate superior culinary skills with a creative spirit
  • Assist with training and development of new and existing staff
  • Communicate and enforce all company policies
  • Assist the Chef & superiors with new menu designs & costing to ensure targets are met
  • Work well under pressure and meet established goals and objectives on time
  • Provide accurate recording of all food inventories and maintain established food cost
  • Deliver accurate reporting for interdepartmental transfers of food and manage labor
  • Conduct daily checks of the production areas and ensure that the proper storage procedures are met
  • Actively participate in the Health & Safety Program and follow all safety rules
  • Ensure consistent and smooth running of the kitchen in the absence of the Chef
  • Ensure proper food purchase, inventory and storage
  • Ensure that all work areas, storage and coolers are always kept clean & organized
  • Assist other kitchen staff as the need arises
  • Perform other administrative tasks as communicated by superiors
  • Ensure that required standards are adhered to in the production and preparation of food - in quantity & quality
  • Work towards exceeding customer's expectations by encouraging and promoting a high level of service
  • Ensure all complaints, inquiries, and suggestions by customers are attended to accordingly
  • Give appropriate support or guidance to other members of the kitchen when the need arises
  • Resolve possible disputes within the kitchen and report any unresolved ones
  • Promote good team spirit regularly
  • Ensure all dishes are prepared according to specification and served at the correct quality, portion size, and temperature
  • Report any equipment deficiencies
  • All other responsibilities as assigned.

THE INDIVIDUAL

  • 3+ years' experience in a similar position or higher working in a fast-paced production kitchen and catering with multi-unit operation
  • Ability to analyze and interpret financial information related to food, menu and labor costing
  • Superior catering skills with a creative spirit
  • Strong planning, organizational, and time management skills
  • Computer skills (Word, Excel, Outlook, etc.)
  • Ability to work under pressure and meet established goals and objectives
  • Financial and business development experience
  • Superior customer service, team building, and conflict resolution skills
  • Strong communication skills, problem-solving, decision-making, and interpersonal skills

CERTIFICATIONS

  • Professional cooking diploma - Red Seal is required
  • Food Safe certificate is required
  • A high school diploma is considered an asset
