Job Description

The Beverage Director will be responsible for overseeing all beverage operations within the resort, ensuring the highest standards of quality, innovation, and customer satisfaction. This role involves managing the beverage program, developing new beverage activations, and maintaining strong vendor relationships. The director will also be responsible for inventory control, cost management, and ensuring compliance with corporate standards.

Job Duties Include:

The Beverage Director will be responsible to oversee all beverage within the resort as well as Public Relations and Marketing, photo shoots, and menu creation.

  • Manage and lead the beverage and wine program for the hotel.
  • Continuously, updating and executing new beverage activations and programming throughout the year.
  • Operational focus on all bars of the hotel.
  • Create and maintain professional working relationships with all beverage suppliers.
  • Negotiate with vendors, order supplies, and manage inventories.
  • Oversee and collaborates on the creation of new seasonal menus, new concept development, SOP creation, and corporate standards control throughout all outlets and Banquets.
  • Ensure that all beverage venues and banquets areas fully comply with our corporate beverage programs and standards and that the correct products are always in place and being used correctly.
  • Participate in recruiting, interviewing, hiring and training bar staff.
  • Coach and mentor service staff, including bar team, and ensure accountability if expectations are not being met.
  • Create and foster a positive service focused culture by consistently utilizing LQA and Forbes 5 star standards.
  • Set a consistent standard for all executed cocktails within the hotels and ensure adherence at all times.
  • Oversee the preparation of beverages and ensure quality of product served.
  • Support and motivate the team to join cocktail competitions to represent the hotel.
  • Interact with guests and members to develop loyalty and exercise great customer relations.
  • Ensure bars are profitable by analyzing liquor costs and revenues.
  • Set and maintain standards for safe food handling (EHC compliance), cleanliness and safety.
  • Managing the beverage cost by working with our purchasing team to meet our beverage revenue and cost goals for liquor, wine, and beer.
  • Review sales and beverage costs, and reconcile any discrepancies in accounting. Ensure proper cash management.
  • Perform inventory and spot checks at month end and compare vs sales reports.
  • Responsible for the development and maintenance of all policies, procedures and quality standards within the department, utilizing a continuous improvement approach to ensure a high quality, cost effective and customer focused operation.
  • Other Duties and Projects as assigned

Qualifications

  • 5+ years’ experience as a bartender in a high volume restaurant/bar
  • 3+ years’ experience as a manager or bar manager
  • 3+ years’ experience curating cocktail menus
  • WSET III certification or sommelier certification preferred
  • Department Head experience preferred
  • Extensive working knowledge of alcoholic and non-alcoholic beverages.
  • Knowledge of local and state regulations related to alcohol service and health code compliance.
  • Knowledge of basic accounting principles, personnel management and marketing.
  • ProServe certification mandatory
  • Inventory management
