Job Description

The Catering Manager position oversees the entire Catering Department. It is the responsibility of this role to ensure all operations are running to their full potential, that sales goals are being met, and that quality of services are upheld. This position handles both internal and external catering sales (majorly focusing on the sales within the CAC Building), manages the catering budget and projects upcoming business, is responsible for marketing, menu development, custom quoting and standards. This position also handles all client invoicing, small wares inventory and ordering, as well as daily SPLH goals.
Responsible for: catering business operations, client relations, marketing, business development, food and beverages sales, menu creation, promotions and marketing, custom quoting, contract management, liaise with conference services, client invoicing, financial reporting, HR requirements, customer service, developing catering policies and standards, food quality management, communication between conference services and catering, managing CaterTrax website.
Reports to: Food Service Director
Manages: Assistant Catering Manager, Catering Supervisor, Set-Up Supervisor

Job Responsibilities


Sales Management
• Handle all catering sales calls
• Meet with client to discuss catering requirements
• Ensure all information acquired is accurately updated in Catertrax
• Provide outstanding customer service
• Utilize selling to encourage upgrades and add-ons
• Completing custom quotes in conjunction with the Executive Chef

Event Contract Management
• Collecting contracts on a daily basis from CaterTrax and Caterease
• Ensuring both CaterTrax and Caterease copies are identical when it comes to Catering
• Attend weekly meeting with the conference office and catering team

Daily Event Management
• Contacting the conference office if unsure about information on a contract
• Managing catering supervisor to ensure all details of the catering contract are executed correctly and on time

Financial Reporting and Management
• Complete quarterly, monthly and weekly sales and labour projections
• Complete any financial reports requested by the Food Service Director
• Ensure team is working within the Catering Budget
• Ensure expenses are accounted for
• Ensure retail prices accurately reflect expenses and a reasonable profit margin

Marketing
• Marketing catering business to both internal and external clients
• Develop specials and LTOs to encourage ordering
• Work with Conference Services to take part in Conference Centre marketing projects
• Track success of marketing initiatives

Managing Catertrax Website
• Ensure all menus are accurate and up-to-date
• Ensure back-end reporting is accurate


Miscellaneous
• New menu concepts and development
• Managing smallwares inventory and ordering
• Managing liquor license


Health and Safety
• Enforce Health and Safety regulations and policies
• Review incident report documentation in the event of an accident

Qualifications

• Requires at least 3 years of experience
• Requires at least 1-3 years of experience in a management role
• Previous experience in events and catering required
• Requires a bachelor’s degree or equivalent experience
• Available to work event-based hours
• Must have excellent communications skills
• Complete Food Handlers and Alcohol Service Certifications as required
• Requires occasional lifting, carrying, pushing, and pulling up to 50 lb.
• Ability to stand for extended periods of time

Compensation Data

Min - $50,000 to Mid - $75,000
