What can I expect to do in this role?
In this role you will: • Provide team leadership within the cooking operation for the correctional institution • Provide direction and support to inmate helpers • Prepare and assemble meals • Maintain an inventory of supplies • Ensure the safety and security of helpers, staff and equipment • Maintain proper sanitary conditions in the kitchen area
How do I qualify?
Mandatory Requirements:
• Possession of Journeyman Chef's Certificate as issued by the Ministry of Training, Colleges and Universities OR sufficient acceptable experience in volume cooking • Valid First Aid and Heartsaver Certificate or the ability to obtain • Ability to work shift work, weekends, and holidays
Technical Knowledge:
You have practical, applied knowledge of:
• Large volume cooking and baking principles • Standard cooking and food preparation • Food storage procedures and methods • Portion control standards and the proper use of kitchen equipment and tools • Food safety practices
Other Essential Skills:
Your skills and abilities include:
• Team leadership skills to provide instruction to subordinate helpers • Communication skills, tact and diplomacy to work with ministry staff, inmate helpers and service providers • Analytical and problem-solving skills to identify and assess workplace hazards, equipment malfunctions and food service issues • Ability to acquire and apply knowledge of relevant legislation (i.e. Occupational Health and Safety Act, Workplace Hazardous Materials Information System) • Written communication skills to prepare various reports • Basic computer skills to input, track and record data
