The word of the professionals
David Côté, dishwasher at the Chez Chose restaurant, Montreal (www.chezchose.net)
What does your job consist of?
I do the dishwashing, but that’s not all. I also participate in preparing dishes, making platters and sauces. I prepare the vegetables, I arrange the meat. I also do a lot of cleaning and putting things away. Dishwashing is only a small part of my job. Before starting at Chez Chose I worked as a cook in several restaurants. But I would like to have experience in a high-end establishment. I learn a lot here.
What aspects of your job do you like most?
I like the human side of the job. Here we are a small team. I really like the interaction with my co-workers.
In your opinion, what are the two main qualities that you have to have for this job?
You have to be resourceful and have a good sense of initiative.
